I am planning a small mixed succulent bowl with several thick-leaf plants. Should I leave visible gaps between each plant for airflow, or can they be planted close together if the pot has strong drainage?

I would start with drainage and light first, then adjust the planter style around that. Small decorative pots can work well if the plant stays in a removable liner with a gritty mix.
